Strawberries with Fresh Mozzarella and Mint Pesto

Today is the kind of day that makes you happy to be alive.  The sun is shining, the kids are outdoors playing, my husband is working in the yard, and I am getting ready to enjoy the day.  Today is the kind of day where you can step outdoors, take a deep breath, and let it cleanse your soul.

Barbecues, airplanes, baseball, lawnmowers, neighbors taking walks (I should really join them), dogs playing, flowers blooming, blue skies, and strawberries with fresh mozzarella and minto pesto.  These are what make today wonderful.

Strawberries with Fresh Mozzarella and Mint Pesto
1 lb strawberries, sliced
2 Tbs sugar
1 cup extra virgin olive oil
1 cup mint leaves, plus more for garnish
1/4 cup parmesan
1 clove garlic
1 lb fresh mozzarella cheese, cut into 1/2 inch slices
1 Tbs balsamic vinegar

1. Combine strawberries and sugar in a bowl; set aside.

2. In a food processor combine olive oil, mint leaves, parmesan, and garlic.

3. Layer mozzarella on plate.  Spoon strawberries, mint pesto, and balsami vinegar over top.  Garnish with mint leaves.
