Lima Bean Summer Salad





Sometimes there really aren't words to say and sometimes I just want to share a recipe.  This is one of those times. 


Lima Bean Summer Salad
12 ounces frozen lima beans, thawed (or fresh!)
2 cups frozen corn, thawed (or fresh!)
1 pint  cherry tomatoes, cut in half if large
2-3 green onions, sliced
3 Tbs red wine vinegar
2 Tbs olive oil
2 limes, juiced
1 tsp white sugar
1 tsp coarse salt
2 cloves garlic, very finely minced

In a large bowl, combine the red wine vinegar, olive oil, lime juice, sugar, salt and garlic. Set aside.

Gently mix together corn, lima beans, cherry tomatoes and green onions. Cover with dressing and refrigerate for 2 hours before serving.

Inactive Time: 2 hours
