*gasp* This is me coming up for air. Since Thursday I've had some family type people staying with me and I've been really busy.
Teenage boys eat a lot but they don't like to wait to eat something until after you have taken photos. A real shame too because I made some pretty yummy stuff this weekend that was devoured and no leftovers to be had. Who knew a 16 year old boy would eat leftover shredded chicken with ceasar dressing for a late night snack? That shredded chicken was suppose to be stir fry tonight! For a whole family!
That same 16 year old boy pretty much inhaled these dulce de leche cashew bars but he likes to blame other poeple for that. "Oh it must have been grandma", I heard more than once this weekend.
Dulce de Leche Cashew Bars
1/2 cup (1 stick) salted butter1 cup brown sugar
1 large egg
1/2 tsp salt
1 cup all-purpose flour
1 cup Dulce de Leche
3/4 cup roasted salted cashew halves
Preheat oven to 350 degrees. Line an 8x8 pan with parchment paper.
Melt butter over low heat in a medium (2 quart) saucepan. Remove from heat and let cool slightly.Add brown sugar to the saucepan of melted butter and whisk until mixture starts to pull away a bit from the sides of the pan, 1-2 minutes. Mix in egg, then add salt and flour and stir vigorously for 1 minute.
Spread on bottom of 8x8 pan. Cover with cashews. Using a spatula spread dulce de leche on top of the cashews.
Bake for 35 minutes, or until set in the center and golden brown at the edges.
Cool completely. Remove bars from pan by lifting up parchment paper. Cut into 25 squares.
